Root Causes of Adulteration

Milk is woven into everyday life in India. From a child's morning glass of milk to our chai, curd, paneer, ghee and festive celebrations, it is far more than just a food. It's part of our culture and daily nutrition.

It is therefore no surprise that India has grown to become the world's largest milk producer, contributing nearly 25% of global milk production. But behind this remarkable achievement lies one of the world's most complex dairy ecosystems - Unlike many developed countries, where milk is produced by large organised farms, India's dairy industry is powered by millions of small and marginal farmers, across villages. 

This decentralised model has helped India produce enough milk to feed a growing nation. But it has also created one of the world's most complex dairy supply chains.

Milk from these farms passes through multiple collection, transport and processing stages before reaching your home.  Every additional step makes quality harder to maintain and traceability more difficult. 

Today we often read headlines about milk adulteration "Detergent found in milk." "Urea mixed into milk." "Major milk adulteration racket busted."

These stories are shocking - but they also raise an important question.

Why does milk adulteration happen in the first place?

The easiest response is to blame the farmer or the middleman. But the reality is far more complex. More often than we realise, milk adulteration is the result of systemic challenges- economic pressures, fragmented supply chains, inadequate infrastructure and poor incentives.

Adulteration doesn’t happen randomly - It has clear root causes and to prevent it , we must first understand and address it at the root.



The Two Main Root Causes

Root Cause 1: A System That Doesn't Always Work for the Farmer

Most dairy farmers in India are small and marginal farmers, owning just two to five cows or buffaloes. For most dairy farming families, milk isn't just a product—it's their family's daily income.

Farmers are largely paid based on the quantity of milk they supply and its fat and SNF (Solids-Not-Fat) content.

When prices are too low or milk is unfairly rejected for reasons beyond their control, farmers come under immense financial pressure, and shortcuts can begin to creep in—not out of bad intent, but out of the need to survive.

This is where the system begins to fail.

Some farmers may try to improve fat or SNF readings using inexpensive additives. Others may continue selling milk from animals on antibiotics rather than discard it. Limited access to veterinarians and trained paravets often means diseases are detected late, antibiotics are used more frequently, and farmers don't always receive the guidance they need to prevent residues from entering the milk supply.

These practices are unsafe and unacceptable, but they are often symptoms of a system that doesn't adequately support farmers.

But that's only one part of the story. The other begins after the milk leaves the farm.



Root Cause 2: Lack of Infrastructure

Milk begins changing the moment it is collected. Naturally occurring bacteria multiply rapidly, especially in India's climate. Unless milk is chilled within a few hours, it starts becoming acidic and eventually spoils.

The only natural and ethical way to preserve milk is to chill it immediately.

But for the millions of litres of milk collected every day from thousands of small villages, that is easier said than done.

Bulk milk coolers, refrigerated transport and cold-chain infrastructure require significant investment. In many regions, collection centres are far from chilling infrastructure, yet everyone in the supply chain - from farmers to transporters and middlemen - is expected to ensure that milk doesn't spoil.

When the infrastructure doesn't support them, shortcuts begin to creep in.

Some neutralise acidity using chemicals like baking soda. Others add preservatives or disinfectants to slow bacterial growth. These chemicals don't solve the problem - they simply mask the spoilage.

If we expect every stakeholder in the dairy ecosystem to be accountable, we must first provide them with the infrastructure to do the right thing. Safe milk comes at a cost, and as long as milk is treated as a cheap commodity, the pressure to cut corners will always exist.



Our Mantra for Safe Milk

As mentioned earlier, adulteration is often the outcome of inadequate infrastructure, economic pressure and the need to protect a livelihood.

These challenges cannot be solved in isolation. The solution lies in strengthening the dairy ecosystem itself.

At Sid's Farm, we focus on addressing these root causes at the grassroots. This is our mantra for safe milk.

Work With Our Farmers, Not Against Them

We support our farmers with fair and timely payments, reducing the pressure to take shortcuts.

If a farmer honestly declares antibiotic milk, we still pay for it - even though it never enters our system. That removes the incentive to hide it.hu

We also provide necessary veterinary and paravet support so diseases are detected early and medicines are used only when necessary. We also work with farmers to improve cattle health and reduce diseases like mastitis, so antibiotics are needed less often in the first place. In fact, one such initiative also received support through the SIFEM grant.

That's how we work with our farmers, not against them.


Chill. Chill. Chill.

We invest in cold-chain infrastructure because chilling milk immediately is the only natural and ethical way to keep it safe. We collect and chill milk at the nearest Bulk Milk Chiller within three to four hours of milking and maintain that cold chain all the way through.


Test. Test. Test.

Milk from thousands of farmers passes through collection agents, transporters, chilling centres, processors and distributors before reaching consumers. The more people involved, the harder it becomes to know exactly where a problem occurred. When accountability is diluted, so is the incentive to maintain quality.

That's why we test milk at three levels - at the farmer level collection point, the Bulk Milk Chiller and then a final check at the plant before it gets packed and delivered - so we can be accountable for every pack we deliver. 



Why We Go Beyond Testing

Testing tells us whether milk is safe today. But without addressing the other two root causes, no amount of testing will solve for the larger problem of adulteration across India. 

That's why we work on the root causes every single day, strengthening the system behind every drop of milk.Today, we work with over 6,500 farmers and serve more than 50,000 families

Those numbers remind us of the responsibility we carry every day - to keep strengthening the dairy ecosystem while delivering milk families can trust.

We also know that changing an entire dairy ecosystem doesn't happen overnight. As a nation we solved for the problem of quantity a few decades ago. The challenge is now to solve the problem of quality. Every step towards supporting farmers, investing in better infrastructure and preventing adulteration at its source is a step in the right direction.

Good dairy takes great effort. But when it comes to something your family consumes every day, almost safe isn't safe enough.
